LAFAYETTE E LA MUSICA
Lafayette fu fondata nel 1821 col nome di Vermilionville da Jean Mouton, un immigrato dall'Acadia di lingua francese. Nel 1884 venne rinominata in Lafayette in onore del Generale Gilbert du Motier de La Fayette, militare francese che fu grande protagonista nella Guerra di indipendenza americana. Eppure quella che una volta fu centro agricolo, poi petrolifero, ora è anche un'apprezzata meta turistica in quanto si trova al centro della regione delle culture Cajun e Creola. Che qui vivono per davvero, non solo a livello culinario, ma anche musicale. Vivere la musica cajun e zydeco significa sperimentare i tantissimi dancehall restaurant che permettono di gustare la musica locale: ad esempio Randol’s, Prejean’s and Pont Breaux’s. O ancora, nei week end, anche al Vermilionville, al Begnaud House e al Blue Moon Saloon. Soprattutto quest'ultimo merita particolare attenzione: inaugurato nell'aprile del 2002 sul portico posteriore della Blue Moon Guesthouse, da allora è diventato uno dei luoghi più famosi d'America per la musica proveniente da tutto il mondo.
LE CULTURE CREOLE E CAJUN NEL SOUTHWEST LOUISIANA
Se i più piccoli non potranno mancare l'appuntamento con un autentico paradiso dei dolci, il candyland cottage and ice cream (109 Benoit Patin Rd) nella vicina Scott (15 minuti ad ovest di Lafayette) i più grandi potranno finalmente entrare in contatto a livello culinario con la cucina creola e cajun. Inutile nascondersi, coloro i quali vorranno assaggiare la vera cucina della Louisiana, non dovranno andare tanto lontano dal Candyland Cottage per assaporare un ottimo boudin o un craklin: fermatevi, infatti, nei vicinissimi Billy's Boudin & Craklings e don's Specialty Meats ed assaggiateli.
LAFAYETTE AND THE MUSIC
Lafayette was founded in 1821 under the name of Vermilionville by Jean Mouton, an immigrant from French-speaking Acadia. In 1884 it was renamed Lafayette in honor of General Gilbert du Motier de La Fayette, a French military who had an important role in the American War of Independence. Yet what once was an agricultural center, then a petroleum center, is now also a popular tourist destination as it is located in the middle of the region of the Cajun and Creole culture. Those cultures affect also the music scene. Living the cajun and zydeco music means experiencing the many dancehall restaurants that allow you to listen to local music: for example Randol's, Prejean's and Pont Breaux's. Or again, on weekends, even at the Vermilionville, at the Begnaud House and at the Blue Moon Saloon. Especially the Blue Moon Saloon deserves special attention: it was inaugurated in April 2002 on the back porch of the Blue Moon Guesthouse, since then it has become one of the most famous places in America for music coming from all over the world.
CREOLE AND CAJUN CULTURES IN SOUTHWEST LOUISIANA

WHAT TO EAT IN LOUISIANA
The traditional Boudin is a combination of meat and rice that looks like a sausage. The nursery rhyme very famous in this area is as follows: "Napa Valley has wine, New York has Pizza, Wisconsin has cheese ... South west Louisiana has Boudin". Here, boudin is even more of a religion. There're many types of Boudin: Boudin Blanc (a slightly colored boudin), crawfish boudin (made of cooked shrimp tails and rice), Shrimp boudin (cooked shrimp and rice), alligator boudin (meat of alligator and rice), Hot Boudin (extra spicy), Mild Boudin (spicy) and smoked boudin (smoked). It is so famous that there is the Boudin Trail, a route in the south west of Louisiana that will take you to experience all the best restaurants which offer Boudin.

Qui le culture creole (con influenze francesi, spagnole ed africane oltre ai nativi americani) e cajun (franco-canadese ed ovviamente nativi americani) sono ben radicate, anche a livello culinario. La cucina creola è legata ad un vasto uso di ingredienti: la chiave sono le salse, le spezie e le erbe. La cucina cajun, che è particolarmente radicata nel southwest Louisiana ed in particolare all'area di Lafayette, invece è decisamente più rustica. Se qui avrete assaggiato Boudin e Craklin, la "musica" cambierà a New Orleans. Li testerete i Po-Boys, abbreviazione di “poor-boys”, ragazzi poveri, ovvero grossi sandwich fatti con pane francese e gamberetti o manzo, la muffuletta, un sandwich gigante riempito di formaggio, insalata e affettati italiani e la mitica jambalaya, un miscuglio speziato a base di riso, e diversi tipi di carne (manzo, salsiccia, pollo) simile al "nostro" risotto.
Here the Creole (with French, Spanish, African and Native Americans influences) and Cajun cultures (French-Canadian and of course Native Americans) are deeply rooted within the realm of food. The Creole cuisine is linked to a vast use of ingredients: the keys are sauces, spices and herbs. The Cajun cuisine, which is rooted in southwest Louisiana and particularly in the Lafayette area, is rather more rustic. If you've tasted Boudin and Craklin here in Lafayette, in New Orleans you will taste the Po-Boys, short for "poor-boys", a submarine-type sandwich made with French bread. Order it “dressed” if you like your po’boy with mayonnaise, lettuce, pickles and tomato. The muffuletta, a giant sandwich filled with cheese, Italian salad and cold cuts and the legendary jambalaya, a spicy mixture based on rice, mix of meat (beef, sausages and chicken) similar to italian risotto.

E poi, ancora, il gumbo, che possiamo collocare a metà tra una minestra e uno stufato, il grit (granturco macinato mescolato fino a creare un composto semi-liquido che somiglia al semolino) ed ovviamente i gamberi di mare e sopratutto fiume, il vero fiore all'occhiello della cucina della Louisiana. I gamberi di fiume, sono allevati in Louisiana e sono presenti in quasi tutte le ricette. Se amate i dolci, infine, non dimenticatevi di assaggiare, soprattutto a New Orleans, i famosi beignets.
And then the gumbo, a combination of rice, roux (butter or oil mixed with flour), seafood or meat, vegetables, spices and often okra and obviously the crawfish: they are bred in Louisiana and you'll find them in almost any louisiana's recipes. Lake Martin è poi perfetto per il Bird Watching, grazie alle oltre 205 diverse specie di uccelli ospitate, tra cui anche il grande airone azzurro. Ma la grande attrazione di ques'area paludosa saranno ovviamente gli alligatori. Ne incrocerete diversi lungo il percorso, piccoli e grandi.
Lake Martin is perfect for Bird Watching, thanks to over 205 different species of hosted birds, including the great blue heron. But the great attraction of this marshy area are obviously the alligators. You will ecnounter many of them along the way, small and large.

E le zanzare? Nonostante il nostro tour fosse programmato in pieno pomeriggio (nel mese di agosto), le zanzare non sono state un problema. Solo tante, tantissime libellule della Louisiana ci hanno fatto compagnia lungo le due ore di tour. Alcune delle quali si sono addirittura appoggiate alle nostre braccia e gambe per diversi minuti. Ci è stato detto che non solo non sono pericolose, ma quando si appoggiano su di voi è sinonimo di molta fortuna. Così almeno dice la leggenda...
And what about mosquitos? Although our tour was scheduled in the middle of the afternoon (in August), mosquitoes were not a problem. Only many Louisianaìs dragonflies have kept us company along the two-hour tour. Some of them even leaned on our arms and legs for several minutes. We have been told that they are not "dangerous": legend says that if they lean on you, they will bring you happiness.
